Chinese are skinnier and usually a little tamer...
Russian are fat and fluffy...and usually rather mean...
Chinese also have a small mouse like tail while russian have a little fluff ball...

Chinese are more mouse like they have longer and pointier noses and russian dwarf hamsters are tiny and dont have a long or pointy nose.
Dwarf hamsters are smaller, and sometimes a little mean. Or at least from my experience.
